"Eastern Carolina Pit Cooked Barbecue"--here in Western Carolina! The reviewer ordered the specialty "Big Pig Chopped Pork Barbecue," which was served quickly on a sectioned yellow Melmac plate. Pickle slices and a dollop of coleslaw were served on the side. This was an oversized, uncut sandwich, with meat chopped finely, and served unsauced. Sauce was served on the side, heated, in a metal pitcher. Unsweetened iced tea was served in mason jar with a lemon wedge notched over the rim. The slaw was inedible, striking notes of airplane glue and acetone--mercifully, it was not served ("Carolina style") on the sandwich.
The sandwich itself exploded upon lifting. The sauce was not unpleasant, being neither tomato- nor vinegar- based, but sweet almost syrupy in consistency (hm, could it be?), and was essental to moisten the somewhat dry meat. There were other condiments at the table on a wagon-wheel lazy susan: proprietary hot sauce, Texas Pete hot sauce, catsup, sugar, Texas Pete pepper sauce, and salt. The proprietary hot sauce was mild, pleasantly aromatic, and vinegar based. With careful saucing and application of pickles, a more-than-passable sandwich could be created, but note the need to customize the dish.
The meat was properly smoked, tended toward driness, and was flavorful but had very little outside content. Sides of interest: fried okra, Brunswick stew, all-you-can-eat salad bar. The fries were thinly sliced, fresh, crisp, and served hot and salted. A substantial, largely male lunchtime clientele. The decor is an assemblage of country bric a brac, spiced with a tapestry depicting nearby Biltmore House.

as a big BBQ and grills food lover, we love to explore new cooking methods to improvise BBQ cooking skills, BBQ works perfect for most seafood tho.
